- 1 whole chicken breast, skinless and boneless
- 2 medium tomatoes
- 1 small onion, diced
- finely 1 green bell pepper, chopped finely
- 4 garlic cloves
- 8 cups vegetable broth or water
- 1 tablespoon chili powder
- Salt to taste
- Fresh cilantro
- Lime wedges
- Shredded cheese
- Crumbled tortilla chips
- Add all ingredients except for optional additions into a large stockpot and bring to a boil over high heat until chicken is cooked through, then reduce heat to low and simmer for 5 minutes.
- Remove the chicken from the pot using a slotted spoon and place it in a small bowl. Continue boiling the soup over medium-high heat until it reduces slightly, about 10 minutes. Then, use a Blendtec blender to blend the mixture together so that it’s mostly smooth but still has some texture from the vegetables.
Alternatively, pour your mixture into the Blendtec in batches and blend each batch at high speed until smooth before adding more soup to blend again!
