Cake batter is one of my favorite things to make in the kitchen.

I love coming up with new, crazy cake flavors and testing them out. I also think they are great for when family or friends come over because you can make them in no time flat!

The problem with making cake batter in a Vitamix is that you have to be extra careful about how thick your batter is compared to traditional methods.

If it’s too thin, it won’t blend properly and if it’s too thick, it will stop your blades from turning and the motor will burn out (been there!).

Tips For Making Cake Batter In A Vitamix

The most important thing is to NOT OVERFILL your Vitamix container.

If you put too much liquid in, like all of the wet ingredients in a cake batter recipe, then it’s going to be very hard to blend and will probably move around instead of sticking together.

This is because when we make smoothies in our Vitamix, the blade creates an upward force on the mixture and causes it to climb up the sides of the jar.

With cake batter, when everything is mixed together smoothly there isn’t anything for this upward force to grab onto so it actually has no choice but to surround each ingredient with lots of air and not mix together very well.

The solution? Fill your jar HALF to THREE-QUARTERS of the way full and don’t over-process or run it for too long.

This will make sure that there’s enough liquid in the container to move everything around, but not so much that the batter climbs up instead of sticking together.

This should only require 1-2 minutes on a lower speed.

If you do try to blend it longer, then the batter will climb up even higher and will be much harder to mix together smoothly.

Once everything is well-mixed, THEN add in your dry ingredients.

If all of your wet ingredients are mixed together before adding in the dry ingredients AND you only use about HALF to THREE-QUARTERS of the container’s total capacity, this should not be an issue!

Quick & Easy Cake Batter Recipe Makes 1 cake batter serving. Increase the measurements if you’d like to make more.

Ingredients

  1. 1/2 cup of water
  2. 1/8 tsp baking powder
  3. 3 tablespoons white flour
  4. 1 tablespoon brown sugar or maple syrup or honey for vegan option 
  5. 1/8 tsp vanilla extract
  6. Dash of salt
  7. Optional: 1 tablespoon mini chocolate chips

Instructions

  1. Blend all ingredients on high speed until smooth, about 1-2 minutes.
  2. If it’s still too thin, add another spoonful of flour and blend again.
  3. Pour batter into the oven and bake at 350°F for 15-20 minutes.
  4. Add in 1/2 to 3/4 cup of flour to make it thicker if desired.
