Some people have been trying to seal food in a vacuum for years, dating back at least as far as the 1940s.
Industrial-grade machines that can do it are from around 1930 and up.
However, applying this technique to home blenders is relatively new–the first one was released by Japanese company Tescom in 2013 with 290W motor power (since then they’ve come out with more powerful models).
They’re not yet available on our shores but may be coming later this year!

Is It Better Than Traditional Blending?
The bottom line is that there are tests and these show a noticeable difference.
Vacuumed mixtures have more concentrated colors with darker pigments, so something really does happen here.
The only question is if this provides any real benefits for us to enjoy or not?
The vacuum blender impact on blend quality is real, but don’t start vacuum blending everything into a smoothie.
There are other ways to keep your blends fresh:
- Ice or frozen ingredients that will help cold storage.
- Minimize blending time and consume right away.
- Lowering the pH of blended drinks with acid can slow down. enzymatic oxidation which typically starts as soon as fruit juice hits air2 (the most common way to do this is adding lemon or lime).
- Add extra antioxidants in general.
Disadvantages Of Vacuum Blending
The disadvantages of vacuum blending are the extra time it takes to pump out everything, and that you can’t use a tamper.
If your recipe needs tweaking on the fly then this may not be the best option for you because if something doesn’t go well, there’s no way to fix or adjust anything without having access to ingredients in their original states.
